Chinese Smiling Sesame Cookie Balls (Edit recipe)

Celebrate lunar new year with keto sesame smiling cookie balls! This original keto version have the texture and taste of the original ones: crispy on the outside and soft on the inside with a hint of sesame flavour from the roasted sesame seeds. If you can not buy already roasted sesame seeds, roast them yourself in a pan until aromatic on low heat.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Turn on the broiler to preheat the oven, and prepare a baking sheet with parchment paper.
  2. Lightly beat the egg white and mix all the ingredients together except for the sesame seeds.
  3. Let dough sit in the fridge for 30 minutes.
  4. Prepare a plate with sesame seeds and a bowl with some water.
  5. Divide dough into 10 balls. Wet hands and cover each ball with sesame seeds. Use fingers to press the sesame seeds into the dough surface.
  6. Place the sesame balls on the baking sheet, then into the hot preheated oven. Turn off the heat immediately and let it bake for 12-15 minutes. The cookies will crack and turn golden brown.
  7. Remove the cookies from the oven and let cool. Best if left overnight before serving.

Notes

Do not store it in an airtight container, it will not stay crispy. If the cookies lose crispiness, simply deep fry it in avocado oil to bring it back to life and let cool completely. You can also add this extra step (of deep frying) when making the cookies to get it closer to the original version. But you CANNOT skip the baking step before deep frying. The dough will not hold its shape and will dissolve in the oil.
