Crunchy PB Stuffed Brownie Bites
No bake, rich and fudgey brownie bites with a creamy peanut butter center, and a crunchy chocolate coating. Gluten, dairy, and refined sugar free!
Ingredients
- 8 whole8 whole8 whole Medjool Dates
- 0.5 cup0.5 cup0.5 cup Almond Flour

- 0.333 cup0.333 cup0.333 cup Cocoa Powder

- 3 Tbsp3 Tbsp3 Tbsp Almond Butter, Or nut butter of choice

- 2 tsp2 tsp2 tsp Pure Maple Syrup
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 3 Tbsp3 Tbsp3 Tbsp Creamy Peanut Butter, For centers*

- .5 cup.5 cup.5 cup Dark Chocolate Chips

- 1 tsp1 tsp1 tsp Coconut Oil
- 0.25 cup0.25 cup0.25 cup Puffed Quinoa

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Dollop peanut butter blobs onto parchment paper ~1 tsp in size, then place in the freezer for 1 hour
- Process brownie ingredients together until smooth
- Roll into 8-9 balls
- Flatten each ball and place solid / frozen peanut butter blob inside, then wrap the brownie dough around it to fully enclose, place stuffed balls in the fridge
- Melt chocolate and coconut oil together until smooth, in 30 second intervals, then stir in puffed quinoa
- Dip each brownie ball in the crunchy chocolate mixture, allow excess to drip off, then place on parchment paper, and in the fridge 10-15 minutes until chocolate has hardened
- Enjoy!
