Protein Banana Bread Bars (gluten-free)
These high protein banana bread bars make for a great breakfast prep or afternoon snack! With over 12 grams of protein per bar, these bars are not only high in protein but also gluten-free and refined sugar free.
Ingredients
- 1.75 cup1.75 cup1.75 cup Oat Flour
- 0.25 cup0.25 cup0.25 cup Vanilla Collagen Peptides Powder - Further Food
- 1 tsp1 tsp1 tsp Cinnamon, Ground
- 1 tsp1 tsp1 tsp Baking Powder
- 0.5 tsp0.5 tsp0.5 tsp Baking Soda
- 2 whole2 whole2 whole Banana, medium, overripe
- 0.25 cup0.25 cup0.25 cup Maple Flavored Syrup - Lakanto
- 1 whole1 whole1 whole Egg
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 0.333 cup0.333 cup0.333 cup Almond Milk
- 1 tsp1 tsp1 tsp Vanilla Extract
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 0.25 cup0.25 cup0.25 cup Cream Cheese, Full Fat
- 0.25 cup0.25 cup0.25 cup Maple Flavored Syrup - Lakanto
- 0.5 tsp0.5 tsp0.5 tsp Vanilla Extract

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees and line an 8x8 baking pan with parchment paper.
- Combine bananas, yogurt, maple syrup, egg, almond milk and vanilla extract in a bowl.
- Stir in oat flour, collagen, baking soda, baking powder and cinnamon.
- Pour batter into prepared baking dish.
- Bake for 20-25 minutes.
- While bars cool, beat together frosting ingredients until smooth and combined.
- Spread frosting over bars, then slice!
