I was organizing some old recipe cards and stumbled on a recipe shared with me by a family friend who is no longer with us. She was the kindest soul and to share these with this community would mean the world to her.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Pulse dates and marshmallows in food processor til well combine, mixture will be very sticky.
  2. Toss in cookies, condensed coconut milk, pecans, vanilla and salt, pulse again to fully combine, mixture should be less sticky.
  3. Scoop by tsp-full and roll into balls (should get around 32-36), then roll in coconut or desired coating.
  4. Enjoy right away or store in an airtight container for up to a week, they will firm up as they set.

Notes

As with many canned coconut milk products, the contents can separate, no worries! The brand I used (Mementa) is best emptied from the can, whisked to fully re-combine and refrigerated a bit before using in this recipe, flavor is amazing!
