Mediterranean Citrus Octopus Salad
This refreshing and protein-packed salad combines tender octopus with bright citrus flavors, fresh herbs, and a light citrus dressing—perfect for any spring time pick me up or quick dish. Also works great for meal prep!
Ingredients
- 1 lb1 lb1 lb Octopus, Cooked, Sliced into bite-sized pieces
- 1 cup1 cup1 cup Tomato, Cherry, halved
- 1 cup1 cup1 cup Persian Cucumber, thinly sliced
- 1 whole1 whole1 whole Navel Orange, segmented, cut into bite sizes
- .5 cup.5 cup.5 cup Kalamata Olives
- .25 cup.25 cup.25 cup Cilantro, chopped
- .25 cup.25 cup.25 cup Mint Leaves, chopped
- .25 cup.25 cup.25 cup Citrus Calamondin Vinaigrette - Big Mama's Backyard Garden, more as needed
Process
