Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a small skillet toast the coconut flakes until slightly browned. Remove and set aside.
  2. In the same skillet toast the chopped pecans then remove and set aside.
  3. In a small jar or bowl, add 1 - 2 tbsp of the apricot preserves.
  4. Top with the yogurt.
  5. Sprinkle the top with the toasted coconut and pecans.
  6. Top with raspberries.

Notes

I like to toast a small batch of coconut flakes and pecans and store them for easily assembly of these parfaits. If using vanilla yogurt start out with 1 tbsp of the apricot jam then add more if necessary. Fresh strawberries can be used in place of raspberries. You can make several of these for easy grab and go breakfast options, just store covered in the refrigerator.
