Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. in a microwave-safe bowl, add cauliflower rice & hash browns; microwave for 4-5 minutes.
  2. allow to cool, then place in a cheese cloth & drain as much water as you can from the veggies.
  3. in a bowl, whisk eggs, psyllium husk, salt, & pepper.
  4. add veggies & cheese to egg mixture & combine well.
  5. preheat waffle iron to medium heat (setting 2 on cuisinart).
  6. grease waffle iron before each use, then add ~¼ cup waffle mixture; cook for 5 minutes or until crisp.
  7. if you make extra, freeze on a sheet pan individually, then store in a bag in the freezer; reheat in your waffle iron & they are good as new!
