Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 400.
- once you decide, add the potato chips, monk fruit, & seasoning to a food processor & blitz a few times into a finer crumble.
- to a bowl, add crunchy mixture + remaining meatball ingredients.
- using a small cookie scoop, make mini meatballs (~80-100).
- place meatballs on a lined baking dish, then bake for ~15 minutes.
- while meatballs are cooking, thread a toothpick with pickles, tomato, lettuce, bacon, & cheese.
- once meatballs are done, add a meatball to the end of each toothpick.
- in a bowl, mix together all ingredients for burger sauce & dip with when serving.
- this also works great in a burger bowl - instead of putting the meatballs on skewers, just start with a base of greens. then add meatballs + pickles + tomatoes + bacon + cheese + potatoes + drizzle of burger sauce on top!
