Ingredients
cookies & cream crust
- 10-1210-1210-12 Chocolate Mint Sandwich Cookies – Catalina Crunch, the outside of the sandwiches
- 222 Dark Chocolate Brownie Superfood Bar - B.T.R. Nation

- 1/2 tsp1/2 tsp1/2 tsp Chocolate Salt Electrolyte Mix - LMNT, I used the mint chocolate flavor

- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Cashew Butter, softened in the microwave for 15-30 seconds

- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Water
matcha mint protein ice-cream
- cottage cheese ice-cream (click for recipe), subbing the following for the protein powder
- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder - Be Well by Kelly

- 2 Tbsp2 Tbsp2 Tbsp Matcha Coconut Blend Superfood Latte - Blume

- 10-1210-1210-12 Chocolate Mint Sandwich Cookies – Catalina Crunch, the inside of the sandwiches
toppings
- Cinnamon Cashew Crunch Protein + Superfood Bar - B.T.R. Nation, crumbled, or their matcha honey crispy treat if you can snag one!

- Sugar-Free Dark Chocolate Chips, finely chopped

- Grain Free Pretzel Sticks, Sea Salt - Fit Joy, cut in half

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
cookies & cream crust
- in a food processor, add catalina crunch cookies (the outsides only) & brownie BTR bar; blitz into powder.
- add softened nut butter to crust & mix well.
- add 1 cookie scoop of crust mixture to the bottom of a 24 silicon mini muffin tin; flatten dough around edges to make into a cup.
- freeze for 10-15 minutes.
- pop out of muffin tins & place on a sheet pan; freeze until ice-cream is ready.
matcha mint protein ice-cream
- follow instructions for cottage cheese ice-cream & add in blume matcha + inside of catalina crunch cookies. .
- pour 1 small-medium cookie scoop of ice-cream mixture on top of each cookie cup.
making into cauldrons
- sprinkle on crumbled BTR crispy treat or any crunchy BTR bar + dark chocolate chips.
- add a half of a pretzel stick into each cookie cup.
- freeze for 2-3 hrs before popping out of muffin tins.
- store in the freezer & enjoy!
