SunButter Protein Bars
These SunButter Protein Bars are naturally sweet, satisfying, and packed with plant-based protein. Made with creamy sunflower seed butter, they’re nut-free, rich in texture, and so easy to put together—no baking required! Keep a batch in the fridge and you’ll have a delicious snack ready to enjoy all week long.
Ingredients
- 0.75 cup0.75 cup0.75 cup Sunbutter, peanut, almond, or cashew butter also work
- 0.5 cup0.5 cup0.5 cup Vanilla Protein Powder
- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup
- 0.5 tsp0.5 tsp0.5 tsp Salt

- 0.5 cup0.5 cup0.5 cup Dark Chocolate Chips, I like Guittard's or sugar-free Lily's chocolate chips

- 1 tsp1 tsp1 tsp Coconut Oil
- 1 pinch1 pinch1 pinch Maldon Sea Salt Flakes, for sprinkling on top, optional

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large bowl, combine SunButter, protein powder, maple syrup, and salt. Mix until a thick dough texture is formed.
- Press the mixture into an 8x4-inch loaf pan lined with parchment paper.
- To make the chocolate layer, add chocolate chips and coconut oil to a small microwave-safe bowl. Heat in the microwave in 30-second intervals, stirring in between, until completely melted. Pour the melted chocolate over the SunButter layer and spread evenly. Sprinkle with flaky sea salt if desired.
- Place in the fridge for 1 hour before slicing into 8 bars or squares. Enjoy!
Notes
Storage: Store protein bars in an airtight container in the fridge for up to 2 weeks.
