Cran-Apple Snack Cake
Easiest little snack cake to make, with a couple added flavors of Fall via the dried apples and cranberries.! I’ve used Maizly Corn Milk and Primal Palate Apple Pie Spice – couldn’t help but add another recipe to the mix for our annual “Apple vs Pumpkin” community recipe campaign! If you need a gluten free version, sub the Primal Palate Gluten Free All Purpose Flour 1:1 and if you want a similar recipe that is Paleo, be sure to check out my Apple Pie Puffins - they’re very similar and you could sub in the dried apples/cranberries for the Apple Cider Pie Filling! I use the BARE SNACKS dried apple chips in this recipe, they're organic and are quite tasty!

- .5 cup.5 cup.5 cup Granulated White Sugar

- 1 tsp1 tsp1 tsp Baking Soda

- 1 tsp1 tsp1 tsp Apple Pie Spice - Primal Palate

- .25 tsp.25 tsp.25 tsp Vanilla Baking SALT - am.Niccoli

- .75 cup.75 cup.75 cup Apples, Dried, I use the Bare Snacks brand

- .75 cup.75 cup.75 cup Dried Cranberries, Organic
- 1 cup1 cup1 cup Cornmilk - Maizly

- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice

- 2 whole2 whole2 whole Eggs, room temperature
- .25 cup.25 cup.25 cup Butter, Unsalted, melted & slightly cooled - can sub dairy free as needed

- 1 tsp1 tsp1 tsp Vanilla Extract

- 4 cups4 cups4 cups Powdered Sugar

- 7 - 8 Tbsp7 - 8 Tbsp7 - 8 Tbsp Cornmilk - Maizly

- 2 Tbsp2 Tbsp2 Tbsp Butter, Unsalted, melted and cooled

- 1 tsp1 tsp1 tsp Apple Pie Spice - Primal Palate

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 385° and line a quarter sized (13"x9") baking sheet with parchment paper.
- In a medium sized bowl, combine flour, sugar, baking soda, apple pie spice and salt, whisk to combine. Add dried apples and cranberries, toss to coat and set aside.
- In another medium bowl, add Miazy and lemon juice and allow to set for 5 minutes. You’re essentially creating “buttermilk” – then add, eggs, melted butter and vanilla. Whisk well until eggs are fully incorporated.
- Pour wet ingredients into dry and stir with a rubber spatula until you have a smooth batter, then pour into the prepared baking sheet, spreading out evenly.
- Bake for 22-25 minutes or until the top is golden brown and the center springs back when touched. Remove from the oven and cool.
- Add the powdered sugar, corn milk, melted butter and apple pie spice to a medium sized bowl and mix with a hand mixer until you have a spreadable consistency. Spread evenly over the top of the cooled cake and add garnish of dried apples and cranberries if using. Slice and serve!
