Easy Mediterranean Couscous Salad

Ingredients
For the couscous
- 2 cups2 cups2 cups Israeli Couscous, small
- 2 cups2 cups2 cups Vegetable Stock
- 1 Tbsp1 Tbsp1 Tbsp Olive Oil

- .5 tsp.5 tsp.5 tsp Kosher Salt

For the salad
- Israeli Couscous, from above
- .5.5.5 English Cucumber, diced
- .5 cup.5 cup.5 cup Kalamata Olives, chopped
- 1 pint1 pint1 pint Tomato, Cherry

- 111 Red Bell Pepper, diced
- .5.5.5 Red Onion, medium, diced
- 8 oz8 oz8 oz Feta Cheese, (crumbled by hand)
- .5 cup.5 cup.5 cup Basil, Fresh, chopped

- 0.333 cup0.333 cup0.333 cup Olive Oil, (plus more as needed)

- 222 Lemon, (juiced)

- 1 tsp1 tsp1 tsp Kosher Salt, (divided)

- .5 tsp.5 tsp.5 tsp Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
Prepare the couscous
- In a medium pot, bring vegetable stock, 1 tablespoon olive oil and 1/2 teaspoon kosher salt to a boil.
- Stir in couscous, cover with a lid and remove from heat. Let sit for 5 minutes.
- Remove the lid and fluff couscous with a fork. Set aside to cool slightly.
Assemble the salad
- Transfer couscous to a large mixing bowl.
- Stir in cucumber, olives, cherry tomatoes, bell pepper and red onion.
- Add lemon juice, 1/3 cup olive oil, remaining salt and black pepper. Mix until evenly combined.
- Crumble feta cheese into the bowl and add fresh basil. Gently stir, taste and adjust seasoning if needed.
- Enjoy immediately, or refrigerate for meal prep. Before serving, drizzle with additional olive oil if the salad has absorbed too much moisture.
