Vegan Crunch Bars
These homemade Vegan Crunch Bars are a delicious copycat version of the classic candy bar — only better! Made with just 5 ingredients and 5 minutes of prep, they’re crispy, crunchy, and perfectly sweet, with a creamy peanut butter twist. Vegan and gluten-free.
Ingredients
- 1.5 cups1.5 cups1.5 cups Dark Chocolate Chips, dairy-free (or chocolate chips/bar of choice)

- 0.5 cup0.5 cup0.5 cup Sweetened Condensed Coconut Milk
- .333333 cup.333333 cup.333333 cup Creamy Peanut Butter, natural recommended- just peanuts and salt!

- 2 Tbsp2 Tbsp2 Tbsp Coconut Oil
- 2 cups2 cups2 cups Rice Krispies Cereal

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Line an 8×8" baking pan (or similar sized pan) with parchment paper.
- In a large microwave-safe bowl, combine chocolate chips, sweetened condensed coconut milk, peanut butter, and coconut oil. Heat in the microwave in 30-second intervals, stirring in between, until melted and smooth. Or, melt everything in a saucepan over low heat, stirring often.
- Fold in the crispy rice cereal until evenly distributed. Mixture will be thick.
- Spread the mixture into the prepared pan and smooth out the top. Place in the fridge to set for at least 2 hours.
- Remove from the pan and slice into 8 large bars or 16 small bars. Enjoy!
Notes
Storage: Store crunch bars in an airtight container in the fridge for up to 2 weeks or in the freezer for up to 3 months.
