Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Cut halibut into bite size pieces
  2. Add lemon juice, ½ tsp turmeric, ½ tsp cumin powder to the fish and mix well
  3. Optional step – Add corn starch and mix so it uniformly covers all the pieces of the fish
  4. Heat a pan to medium, add 1 Tbsp oil and the fish
  5. Shallow fry for 6-8 mins, stirring around till all sides are browned
  6. Remove fish from pan and set aside
  7. To the same pan add the remaining 1 Tbsp oil and heat it to high
  8. Add the onion, zucchini, pepper and corn and sauté for few minutes
  9. Stir in the remaining turmeric, cumin powder, garlic powder and onion powder
  10. Break up the pre cooked rice so its not clumped up
  11. Add pre-cooked rice and sauté everything for few minutes
  12. Add back the halibut to the pan
  13. Serve as a one pan meal or a side
