Spicy Pineapple Lemonade (Edit recipe)

This spicy pineapple lemonade is a street drink of Kerala popularly known as "Kulukki Sarbeth". "Kulukki" means shaken and "Sarbeth" means a sweet cold drink. As the name goes this is a deliciously spicy, tangy and sweet lemonade made with pineapple, lemon, mint and green chilies... yes green chilies !!! They add such a twist to the whole drink! The traditional recipe has soaked basil seeds which we have substituted here for chia seeds. If you can find basil seeds I would highly recommend that as they are cooling in nature and are the best for summer drinks.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Soak the chia seeds in 1/4 cup water for 30 mins. If you are using basil seeds, you just need to soak for 15 mins
  2. Chop 1 green chili and muddle with the mint
  3. Add these and all the other ingredients with half of the water in a jar with a lid, except the ice
  4. Shake the ingredients together really well
  5. Rub the rim of the serving glasses with lemon and dip in the rim in salt (I used two 16oz glasses)
  6. Add the ice cubes to the serving glass and pour the shaken drink over the ice
  7. Top with water as required
  8. Garnish with a slice of lemon and a green chili
