No Bake Salted Dark Chocolate Seed Bars
You don't need to pass on the sweet treats when you're trying to eat healthier. I promise! All you have to do is adjust the ingredients so you can minimize the sugar while increasing the protein, healthy fats and fiber. I use NOW Foods Triple Omega Seed Mix (use code: LARA) which is a main ingredient - I also put this in oatmeal, smoothies, yogurt and more! It's a little crunchy and adds so much nutritional benefits. These bars do it all - a little sweetness and a little health. I don't think you'll be disappointed!
Ingredients
- 0.5 cup0.5 cup0.5 cup Creamy Peanut Butter, you want it to be natural so it's runny

- 0.333 cup0.333 cup0.333 cup Honey

- 1 tsp1 tsp1 tsp Vanilla Extract

- 0.5 cup0.5 cup0.5 cup Gluten-Free Rolled Oats

- 0.666 cup0.666 cup0.666 cup Organic Triple Omega Seed Mix - Now Foods, by NOW Foods (code LARA)
- 0.333 cup0.333 cup0.333 cup Pistachios, Raw
- 0.333 cup0.333 cup0.333 cup Almonds

- 0.666 cup0.666 cup0.666 cup Dark Chocolate

- 1 tsp1 tsp1 tsp Coconut Oil
- 0.25 cup0.25 cup0.25 cup Pistachios, Raw
- 0.25 cup0.25 cup0.25 cup Almonds

- 1 pinch1 pinch1 pinch Maldon Sea Salt Flakes

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Prepare a loaf pan with parchment paper.
- In a medium bowl, combine peanut butter, honey and vanilla until smooth.
- Add in oats, Organic Tripla Omega Seed Mix, pistachios and almonds. Mix well until everything is combined.
- Once everything is well mixed, press the mixture into the loaf pan so it is in one even layer.
- In a small sauce pan on low heat, add the chocolate bar broken up into smaller pieces and coconut oil.
- Stir occasionally until chocolate is smooth and melted.
- Pour it over the bars, tilting the loaf pan so its evenly coated.
- Top with some more pistachios and almonds.
- Sprinkle Maldon salt on top.
- Place in the fridge for 4 hours or until the chocolate is set.
- Remove from the pan, cut into squares or bars and enjoy!
