Lemon & Blueberry Loaf with a Streusel Topping

Ingredients
Loaf
- 0.333 cup0.333 cup0.333 cup Sour Cream
- 1 whole1 whole1 whole Lemon Instant Pudding Mix
- 1 whole1 whole1 whole Vanilla Cake Mix - Flour & Olive

- 3 whole3 whole3 whole Eggs
- 0.333 cup0.333 cup0.333 cup Canola Oil, (or vegetable oil or olive oil)
- 0.5 cup0.5 cup0.5 cup Freeze-Dried Wild Blueberries - CITREVE

Streusel
- 3 Tbsp3 Tbsp3 Tbsp Brown Sugar
- 4 Tbsp4 Tbsp4 Tbsp Oats, Rolled
- 1 Tbsp1 Tbsp1 Tbsp All Purpose Flour
- 3 Tbsp3 Tbsp3 Tbsp Butter, Unsalted, (softened, cubed)

- 5 pieces5 pieces5 pieces Freeze-Dried Grapefruit Slices - CITREVE, (chopped in food processor)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 350
- In a large bowl, with an electric mixer, combine your wet ingredients first; eggs, oil, and sour cream, give it a good mix
- Add your lemon pudding mix and cake mix, and mix well once again
- In a small bowl add your freeze-dried wild bueberries and cover with water, allow to sit for 1 to 2min
- Drain your berries and add them to your loaf batter
- Using a spatula, fold in your berries
- Grease or line a loaf pan with parchment paper and drop the batter inside the tin
- In a food processor add your freeze dried garpefruit slices and pulse until a fine powder comes about
- In a small bowl, get ready to make your streusel topping by combing; your butter, flour, brown sugar, grapefruit powder, and oats
- Evenly pour the streusel over top of the loaf
- Bake at 350 for about 50 to 55 min or until a toothpick comes out of the loaf clean
- Allow to cook for about 15min before cutting into the loaf
- Enjoy!
