Biscuit bites with soy glazed bacon (GF)
Soy glazed bacon utilizing US Wellness Meats and Jozo tamari soy sauce? Gluten free biscuit bites created with Maizly cornmilk? This bite sized appetizer is perfect for game day or bringing to a party. It's perfectly salty with a tiny hint of sweet.

- 0.333 cup0.333 cup0.333 cup Barrel Aged Tamari Soy Sauce - Jozo

- 0.125 cup0.125 cup0.125 cup Brown Sugar
- 0.125 cup0.125 cup0.125 cup Honey

- 2 cups2 cups2 cups Gluten-Free 1-to-1 Baking Flour - Bob's Red Mill
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Baking Powder

- 0.5 tsp0.5 tsp0.5 tsp Baking Soda
- 1 Tbsp1 Tbsp1 Tbsp Granulated White Sugar

- 0.5 tsp0.5 tsp0.5 tsp Salt

- 0.75 cup0.75 cup0.75 cup Cornmilk - Maizly

- 0.5 cup0.5 cup0.5 cup Buttermilk
- 6 Tbsp6 Tbsp6 Tbsp Butter, Salted, Cubed/cold

- 2 Tbsp2 Tbsp2 Tbsp Butter, Salted, Melted

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a small container with a lid add the barrel aged Jozo tamari soy sauce, honey and brown sugar. Mix it together with a fork. Take out your half pound of bacon and cut it in half. Submerge the bacon into the Tamari soy sauce mixture and place on the fridge for at least 4 hours to marinate.
- After 4 hours take out your container and grab a large sheet pan with parchment paper.
- Preheat oven to 400 degrees.
- Place marinated bacon onto the parchment paper in a single layer.
- Bake for 15 minutes or until bacon is fully cooked.
- Once the bacon is cooked and cooled for about 10 minutes, cut into small bite sized pieces and set aside.
- Grab a medium bowl and add dry ingredients(flour, baking powder, baking soda and salt)
- Whisk together and add in cubed cold butter. Use your fingers to press the butter into the flour until it becomes crumbly.
- Add in cornmilk and buttermilk.
- You can use your fingers or a spatula to fold the batter until barely mixed.
- Then add in soy glazed bacon bits
- Fold the dough with a spatula one more time
- The batter will be sticky
- Flour a surface and place biscuit mixture on top
- Fold dough onto itself about 5-6 times
- Cut the dough into 4 equal pieces
- Then cut the 4 pieces into another 4 equal pieces.
- Pull dough from each piece and roll into balls
- Preheat oven to 400 degrees
- Place 1 tbsp of butter into two circular 8 inch pans
- Place in the oven for 2 minutes
- Then take out your pans and add your biscuit dough balls in a circular pattern
- Bake for 15 minutes or until golden brown
- Once baked drizzle with honey and enjoy
Notes
You can omit the salt from the biscuit mix if you'd like since the bacon bits will add salt as well. Before marinating the bacon you can trim the fat if you'd like.
