Raspberry Pistachio Overnight Weetbix (Edit recipe)

This is just one of those breakfasts that just hits ๐Ÿ‘ every ๐Ÿ‘ time ๐Ÿ‘ Creamy, a lil tart from the raspberries, a lil crunch from the pistachios, and somehow feels way more put together than the 5 minutes it takes to make! Itโ€™s been on very high rotation lately and honestlyโ€ฆ I get the pistachio hype ๐Ÿ™‚โ€โ†•๏ธ

Ingredients

For the base:

  • 2 pieces Weetabix
  • 0.333 cup Milk, any works fine bestie!
  • 1 tsp Pure Maple Syrup, optional, but if you like it sweeter than defs add!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Crush Weet-Bix and mix with milk and maple syrup in bowl/container until combined. Press down with the back of a spoon/fork to form the base.
  2. In a microwave-safe bowl, microwave the raspberries for 30-60 seconds, and then mash until it forms a jam-like consistency. Add maple syrup if you desire. Spread over the Weet-Bix base.
  3. In a separate bowl, mix yoghurt and protein powder until smooth and combined. Spread evenly over the raspberry layer.
  4. Add the pistachio spread to a microwave-safe bowl, and microwave for 30-40 seconds, or until slightly runny. Drizzle over the yoghurt layer and use a toothpick to create swirls if you are feeling extra (like me).
  5. Pop in the fridge overnight (or for at least 15 mins), top with chopped pistachios when ready to eat and enjoy!
