- 1/4 cup1/4 cup1/4 cup Dark Chocolate Coconut Cashew Butter Cup - B.T.R. Nation, or dark chocolate chips, finely chopped, sub for add-in

- Grain-Free Pretzel Twists, Sea Salt - Fit Joy, 2 for each "sandwich"

salted chocolate protein caramel
- 1/4 cup1/4 cup1/4 cup Butter, Unsalted

- 2 Tbsp2 Tbsp2 Tbsp mixed nut butter (click for recipe), use any nut butter
- 1/2 cup1/2 cup1/2 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1/2 tsp1/2 tsp1/2 tsp Chocolate Collagen - Further Food

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 1 Tbsp1 Tbsp1 Tbsp Chocolate Caramel Salt Electrolyte Mix - LMNT

- 2-4 Tbsp2-4 Tbsp2-4 Tbsp Water

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
protein cookie pretzel sandwich
- preheat oven to 350.
- follow my instructions for making my grain-free protein cookies (fold in the coconut, pecans, & chocolate for add-ins), then place cookie dough in refrigerator for 30 minutes.
- place a fit joy pretzel on a baking sheet, then add a 1 t cookie scoop of cookie dough on top.
- lightly press another fit joy pretzel on top.
- bake cookies for 12-14 minutes (they will pour over your pretzel).
- allow to slightly cool then using a small round object shape your gooey cookie more around the pretzel to make little bites.
salted chocolate protein caramel + toppings
- in a sauce pan over medium heat, melt butter & brown.
- stir in remaining “protein caramel” ingredients & mix until everything is dissolved.
- transfer to a bowl.
- in a separate bowl, add finely crushed coconut, pecans, & chocolate.
- dip each cooled protein cookie pretzel sandwich into protein caramel, crushed coconut, pecans, & chocolate.
- place on a lined baking sheet & refrigerate for at least 30 minutes to allow caramel to set.
