- Cut a slit in each date and remove the pit, if they’re not already pitted. Place on a parchment-lined tray or plate.
- Fill each date with about 1 teaspoon of peanut butter. Place the stuffed dates back on the tray and place in the freezer for 30 minutes.
- Place chocolate chips and coconut oil in a small microwave-safe bowl. Heat in the microwave in 30 second intervals, stirring in between, until melted and smooth.
- Dip each date into the melted chocolate, using two forks to fully coat and lift them out. Let any excess chocolate drip off, then place back on the tray.
- Sprinkle with flaky sea salt, if using. Return to the freezer for 10-15 minutes, until the chocolate is completely set. Optional: After 5 minutes of chilling, remove the tray and drizzle any remaining chocolate over the dates. Return to the freezer to set.
- Enjoy right away or store in an airtight container in the fridge for up to 10 days.
Notes
Coconut oil: Optional, but helps thin the melted chocolate so it’s easier to dip and coat the dates. Without it, the chocolate will be thicker and a bit harder to bite into.
