Here’s a low carb keto corn chip like no other! It tastes and looks like the real deal without all the carb! It does not contain any cheese, nut flour, legumes! Make it to share with your keto and non keto friends. It’s THAT good! Will you munch or dunk? These keto corn chips are best for snacking or dipping, whatever you are in the mood for - it will stay crunchy, has corn flavour, and will hold up to any dip!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Weigh 260g of fresh or canned baby corn.
  2. Wash, rinse and drain the baby corn and add it to a blender. If using canned baby corn, omit the sea salt. Canned baby corn comes in a salted brine and it might be a bit salty. Discard the liquid of the canned baby corn then wash, rinse and drain.
  3. To the blender, add the egg white powder, flaxseed meal, xanthan gum, baking powder and sea salt, if using.
  4. Blend the ingredients until smooth.
  5. Spread the mixture onto a lined tray for a dehydrator and dehydrate at 115F for 8-10 hours.
  6. After one and half hour, remove the tray from the dehydrator and use a knife or a pizza cutter to score lines on the semi dried mixture to shape the chips into triangles. This will also help with breaking the chips apart later on.
  7. After scoring, put the tray back into the dehydrator and continue to dehydrate for another 6.5-8.5 hours, for a total of 8-10 hours. Alternatively, an oven can be used to dehydrate. Please refer to the video for details.
  8. When dried, break the chips into triangles along the scored lines.
  9. Enjoy the corn chips as is, or shallow fry it at 350F-355F for a few seconds until golden brown, if desired. Be careful not to burn the chips.
  10. Place fried chips on a lined plate with paper towel or a baking rack. Let cool and allow to crisp. Enjoy!

Notes

Different brands of baking powder yields different results as It will contain different ingredients. Baking powder by Purest has Substitution: to sub out baking powder, use 1 tsp baking soda and 1/4 tsp cream of tartar instead. There is no carbs for the baking soda, but the cream of tartar has .046g of carbs per 1/4 tsp.
