Cake Mix Skillet Cookie
CAKE MIX" COOKIE SKILLET - In the event you need to hit the "easy" button in the coming weeks - this little skillet of goodness comes together in no time! While looking through some older recipe cards, I found a recipe my mom used to make using a store bought cake mix & making cookies. One bowl, one skillet...one delicious & decadent treat!
Ingredients
- 1 whole1 whole1 whole Egg, large, room temperature
- .25 cup.25 cup.25 cup Avocado Oil

- .25 cup.25 cup.25 cup Water
- 1 Tbsp1 Tbsp1 Tbsp Pure Vanilla Extract

- 1 whole1 whole1 whole Almond Flour Chocolate Cupcake and Cake Mix - Simple Mills

- 1 cup1 cup1 cup Chocolate Gems - Unreal, optional

- .5 cup.5 cup.5 cup Almond Milk Ice Cream, vanilla (or dairy free vanilla ice cream of choice), optional

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 350°
- In a medium sized bowl, whisk up the egg, oil, water & vanilla until well combined. Add the cake mix & mix with a hand mixer until well combined.
- Stir in your add-ins (if using) then pour into a 7" cast iron pan and bake for 28-32 minutes or until center is set.
- Remove from the oven - let cool slightly & serve with ice cream (if using)
