French Onion Chicken Meatballs

Ingredients
- 1 lb1 lb1 lb Ground Chicken

- .5 cup.5 cup.5 cup Breadcrumbs
- .25 cup.25 cup.25 cup Parmesan Cheese

- Basil, Dried

- Oregano, Dried

- Salt

- Black Pepper

- 111 Egg
- 1.5 cups1.5 cups1.5 cups Gruyere Cheese

- 222 Yellow Onion, large, thinly sliced

- Preheat the oven to 350˚ and line a baking sheet with aluminum foil.
- Start by adding onions to a cast iron skillet or dutch oven with three tablespoons of butter. Let the onions caramelize on a low flame for 40-50m.
- Take some of the caramelized onions and chop them up, add to the meat mixture.
- Form meatballs the size of golf balls and place onto a baking sheet lined with aluminum foil. Bake for 28 minutes.
- Once finished, sprinkle the meatballs with the with gruyere cheese and bake again for an additional 5 minutes or until the cheese is melted.
- Serve over orzo, rice, or pasta.
