Last-minute Dessert Ideas for Mother’s Day

Last week Bill shared some of our favorite brunch recipes for Mother’s Day, and this week I thought it would be helpful to share some last minute dessert ideas for Mother’s Day. Whether you are baking for a loved one, or you are the parent looking to make some memories with your kids, there is something for everyone in this recipe roundup. 

Mother’s Day can also be a difficult one for many. Those who have lost a parent, are struggling to become a parent, or have a strained relationship with their parent. It can be a holiday you avoid, or one that causes a lot of pain. If that is the case, our hearts are with you. We know what it’s like to wonder if you will ever hold your own baby in your arms, and have a family of your own, and we also sadly know what it’s like to lose a parent, and one there was a strained relationship with. We are sending you love on this day, and maybe one of these tasty dessert recipes can be something you make to bring joy into your home this weekend.

This recipe for gluten free fudgy brownies is sure to satisfy any brownie craving! They come together easily, and are even easier to eat! It may be hard to have just one, but these brownies are the perfect dessert to make for loved ones, if you think you can share!
Coconut Cake

This delicious grain-free cake is moist, yet light and fluffy. Filled with layers of vanilla buttercream frosting, and topped with toasted shredded coconut, this cake is perfect for any birthday or family event, and will have everyone going back for seconds.
Grain-free Sugar Cookies

These sugar cookies are perfect for any holiday baking, or party or event. Children will especially love getting to make fun shapes with this dough, and decorating their own cookies. I have not included a recipe for the royal icing, but you can use any royal icing recipe you find (there’s really only one way to make it).
Dairy-free Lemon Cheesecake

This cheesecake is sure to be a crowd pleaser. Made just as you would a regular cheesecake, but in place of the dairy, we used Kite Hill dairy-free cream cheese, and coconut cream. This dairy-free delicacy is so delicious, that even dairy lovers will be coming back for seconds.
