Enjoy the flavors of Japanese hot pot in just 10 minutes with this single serving microwave hot pot! Fast, easy, and comforting, it's packed with veggies, meat, and gluten free noodles. It's my go-to lunch on a busy day. Don't forget the delicious and addicting dipping sauce!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a large bowl, add vermicelli noodles, enoki mushrooms, bok choy, and then beef slices on top.
  2. Drizzle everything with tamari sauce, sesame oil, and mirin, and top with sugar and garlic.
  3. Pour in beef bone broth, then cover the top evenly with napa cabbage leaves.
  4. Use a large plate to cover the bowl, then microwave for 6 minutes. In the meantime, combine ingredients for the dipping sauce in a small bowl and whisk together.
  5. Once done cooking, carefully remove the bowl from the micrwave (be careful, it'll be hot) and uncover.
  6. Use kitchen shears to cut up the napa cabbage and beef into bite sized pieces.
  7. Serve on its own or with rice. Dip each bite in the dipping sauce before enjoying!

Notes

You can use thinly sliced pork if you wish, or make it meatless with firm tofu. Feel free to experiment with other vegetables and add-ins!
