- Place apples in a medium sized stock pot. Add lemon juice, coconut sugar, cinnamon, nutmeg, salt and 1 cup of the apple cider to the apples and toss to coat. Let them sit for 10 minutes.
- Place pan of apples over medium heat, cook until the apples are soft. Probably around 11-13 minutes.
- In a small bowl add the remaining half cup of apple cider and the cassava flour. Whisk to combine well and make a slurry. Pour into the apple mixture and stir. Cook until thickened.
- Remove from the heat, add vanilla and ghee. Stir to combine well and place in the refrigerator and use within a week or freeze for up to 3 months.
- Use to make an apple pie, our apple hand pies or even a tasty waffle topper.
Notes
You should end up with approximately 4 cups of pie filling, which is perfect for a traditional 9" pie. You can also use this filling for making my "glazed apple hand pies" or "apple pie puffins" which you'd need around 3/4 of a cup of for each recipe. It's also delicious on top of waffles or pancakes!!
