Apple, Cranberry and Feta Fall Salad
The fall season is here, but you're still not over those summer salads? Try out this apple and cranberry fall-inspired salad. Packed with greens and a hint of sweetness.
Ingredients
Dressing
- 5 Tbsp5 Tbsp5 Tbsp Apple Infused White Balsamic Vinegar, (I used Zoë Olive Oil)
- 5 Tbsp5 Tbsp5 Tbsp Extra Virgin Olive Oil, (I used Zoë Olive Oil)

- 3 Tbsp3 Tbsp3 Tbsp Salt and Pepper, (to taste)
Salad base
- 0.333 cup0.333 cup0.333 cup Sliced Almonds
- 0.5 cup0.5 cup0.5 cup Spinach
- 0.333 cup0.333 cup0.333 cup Arugula
- 0.333 cup0.333 cup0.333 cup Lettuce, Spring Mix Salad Greens
- 0.5 cup0.5 cup0.5 cup Feta Cheese, (diced)
- 0.333 cup0.333 cup0.333 cup Dried Cranberries, Organic
- 0.333 cup0.333 cup0.333 cup Figs, Dried, (diced)
- 2 Tbsp2 Tbsp2 Tbsp Salt and Pepper, (to taste)
- 2 whole2 whole2 whole Apple, Organic, (diced)
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large bowl comine sliced almonds, spinach, arugula, spring mix, dried cranberries, salt, pepper together, and set aside
- On a cutting board, dice apples and dried figs then add them to salad bowl
- On the same board, dice feta cheese, and apples and add it to the same salad bowl
- In a small jar combine extra virgin olive oil, salt, pepper, and Apple Infused White Balsamic Vinegar, and shake well
- Pour the dressing over the salad base
- Top with sliced apples and more olive oil or balsamic if you desire
- Enjoy!
Notes
Store salad base in fridge with dressing in a jar on the side. Salad should last 3-4 days without being dressed!
