Apple Spice Waffles (Paleo/gluten free)
Waffles are my favorite! They're crispier than pancakes and have all those little nooks to hold the syrup. Speaking of syrup, the cinnamon butter syrup here, it’s simply perfection! It's the chef's kiss in my opinion! Using a dried apples in the recipe is key vs raw apples. By the time the waffle is crispy those dried apples have baked into an almost caramelized texture and provide some great flavor!
Ingredients

- 1 cup1 cup1 cup Otto’s Naturals Non-GMO Cassava Flour
- 1.5 tsp1.5 tsp1.5 tsp Baking Powder
- .5 tsp.5 tsp.5 tsp Redmond Real Salt
- 2 Tbsp2 Tbsp2 Tbsp Coconut Sugar, can sub granulated sugar or maple sugar
- 2 Tbsp2 Tbsp2 Tbsp Ground Cinnamon
- .25 tsp.25 tsp.25 tsp ground Nutmeg
- .125 tsp.125 tsp.125 tsp ground Cloves, optional
- .125 tsp.125 tsp.125 tsp ground Ginger
- .25 cup.25 cup.25 cup Unsalted Butter, melted, can sub ghee or avocado oil
- .25 cup.25 cup.25 cup Pure Maple Syrup, room temperature
- 1 cup1 cup1 cup Water, room temperature, can sub milk of choice
- 1 tsp1 tsp1 tsp Vanilla Extract
- 1 whole1 whole1 whole Egg, large, room temperature
- .75 cup.75 cup.75 cup Dried Apples, I used the Bare Brand

- .5 cup.5 cup.5 cup Pure Maple Syrup
- .25 cup.25 cup.25 cup Salted Butter, can sub ghee
- .25 tsp.25 tsp.25 tsp Ground Cinnamon

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Make cinnamon butter syrup: combine maple syrup, butter (or ghee) and cinnamon over low heat and warm while preparing waffles.
- In a medium sized bowl, combine cassava flour, baking powder, salt, coconut sugar, cinnamon, nutmeg, clove and ginger (if using), whisk to combine, set aside.
- In a small bowl, combine butter (or ghee), maple syrup, water, vanilla and egg. Using an electric mixer, blend until well combined.
- Add wet ingredients to dry and blend with mixer until all dry ingredients are incorporated. Toss in the crushed dried apples, reserving a few for garnish!
- Warm up waffle iron, follow manufacturers directions and cook waffles until a warm golden brown.
- Eat right away or cool completely and freeze to enjoy later!!
Notes
CRIPSY WAFFLE TIP: to keep waffles crisp while you’re making them, warm up your oven to around 200° and place a wire rack inside. As you finish each waffle, place them on the rack. They’ll be crispy and the perfect temperature for enjoying when you’re done using up the last drop of this tasty batter!
