Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350º Fahrenheit. Prepare a muffin pan by lining it with muffin papers.
- In a medium bowl, whisk together the almond flour, sweetener, baking powder, cinnamon, and salt until well blended.
- In a separate bowl, whisk together the eggs, almond milk, and vanilla extract. Whisk in melted butter.
- Pour egg mixture into the dry ingredients and stir together. Fold in diced apple.
- Spoon batter into the prepared muffin pan, filling each cup 2/3 to 3/4 of the way full.
- Top each muffin with chopped walnuts.
- Bake for 2o to 25 minutes or until toothpick comes out clean. Do not over bake (they will be dry if you over bake).
- Allow to cool 5-10 minutes in the pan. Remove from pan and continue to cool on cooling rack.
Notes
Note: you can fold in 2 tablespoon of the walnuts into the muffin batter, and sprinkle the remaining walnuts on top (if you do this, you may need more walnuts for the topping).
