Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350º Fahrenheit. Prepare a muffin pan by lining it with muffin papers.
  2. In a medium bowl, whisk together the almond flour, sweetener, baking powder, cinnamon, and salt until well blended.
  3. In a separate bowl, whisk together the eggs, almond milk, and vanilla extract. Whisk in melted butter.
  4. Pour egg mixture into the dry ingredients and stir together. Fold in diced apple.
  5. Spoon batter into the prepared muffin pan, filling each cup 2/3 to 3/4 of the way full.
  6. Top each muffin with chopped walnuts.
  7. Bake for 2o to 25 minutes or until toothpick comes out clean. Do not over bake (they will be dry if you over bake).
  8. Allow to cool 5-10 minutes in the pan. Remove from pan and continue to cool on cooling rack.

Notes

Note: you can fold in 2 tablespoon of the walnuts into the muffin batter, and sprinkle the remaining walnuts on top (if you do this, you  may need more walnuts for the topping).
