avocado “toast” on cauliflower flatbread
are you ready for an award winning combo? drumroll… avocado + cottage cheese. maybe it's not that ground breaking, but it is delicious, nutritious, & a great way to get in a balanced breakfast!
Ingredients
- 1 whole1 whole1 whole cauliflower crust flatbreads (click for recipe)
- 0.25 - 0.50.25 - 0.50.25 - 0.5 Avocado
- 0.25 - 0.5 cup0.25 - 0.5 cup0.25 - 0.5 cup Organic Cottage Cheese
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Nutritional Yeast
- 1 pinch1 pinch1 pinch Salt and Pepper
- 1 - 21 - 21 - 2 Egg
- 111 Deli Ham, or other breakfast meat
- 111 Cotija Cheese, or cheese of choice
- 111 Radish, I like for dipping extra avocado/cottage cheese mixture
- 111 Cilantro

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- microwave cauliflower crust for ~1-2 minutes.
- in a bowl, mash avocado, cottage cheese, nutritional yeast, & seasonings of choice.
- in a small skillet, fry egg to liking - if using any deli meats, I like to fry that a little bit as well.
- add avocado mash to cauliflower crust, then add fried egg, & any additional toppings you like.
