same cozy, one-pan, weeknight energy, but my version is high-protein, high-fiber, & is packed with nourishment!
i love using kaizen noodles for a serious protein + fiber boost, plus piling in tons of veggies, beef, bacon, & cheese. oh & that creamy cheese sauce? - boosted with maizly's high fiber corn milk for the ultimate creamy fiber boost!
all the classic hamburger helper cheeseburger flavor, none of the mystery packet.
Ingredients
skillet
- 1/2 lb1/2 lb1/2 lb Bacon

- 12 oz12 oz12 oz Bell Pepper and Onion Blend, Frozen
- 8 oz8 oz8 oz Baby Bella Mushrooms
- 1-1.5 lb1-1.5 lb1-1.5 lb Ground Beef, or ground meat of choice

- 10 oz10 oz10 oz Tomato Sauce
- 1/4 cup1/4 cup1/4 cup Unsweetened Classic Ketchup - Yo Mama's Foods

- 1 Tbsp1 Tbsp1 Tbsp Dijon Mustard, or yellow mustard

- 2 Tbsp2 Tbsp2 Tbsp Nutritional Yeast

- 1 tsp1 tsp1 tsp Smoked Paprika
- 1 tsp1 tsp1 tsp Garlic Powder

- 1 tsp1 tsp1 tsp Onion Powder

- 1 tsp1 tsp1 tsp Dry Mustard Powder

- 1 tsp1 tsp1 tsp Salt and Pepper
- 8 oz8 oz8 oz Low Carb Pasta - Kaizen Foods, any shape of noodle

- 3 cups3 cups3 cups Cornmilk - Maizly, may sub regular milk or water

cheesy sauce
- 1/2 cup1/2 cup1/2 cup Cottage Cheese
- 1/4 cup1/4 cup1/4 cup Plain Greek Yogurt
- 4 oz4 oz4 oz Cheddar Cheese

- 1 Tbsp1 Tbsp1 Tbsp Arrowroot Flour, mixed in a little water to form a slurry
- 1 tsp1 tsp1 tsp Salt and Pepper
- 1/2 cup1/2 cup1/2 cup Cornmilk - Maizly, may sub regular milk or water

for serving
- Dill Pickle Slices

- oven-baked bacon (click for recipe)
- Cheddar Cheese

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a large skillet, fry up bacon.
- once bacon is crisp, remove from skillet & add pepper, onions, & mushrooms to grease to saute.
- remove from skillet, then add ground beef & brown.
- once beef is cooked through, add bacon & veggies back in, along with remaining skillet ingredients.
- bring mixture to a boil, then reduce to a simmer for 10-15 minutes or until pasta is al dente.
- in a food processor, add all cheese sauce ingredients.
- stir in the cheese sauce + sprinkle extra cheese on top.
- cover & cook until cheese is melted.
- serve with your favorite burger toppings - pickles, bacon, extra cheese, etc.
