bacon & veggie succotash
i always get asked how to eat more veggies AND make it taste good. well this side dish is FULL of flavor, FULL of veggies, & is super easy to throw together. paired with a perfectly grilled steak & you are sure to have a delicious dinner.
Ingredients
- 3 - 43 - 43 - 4 Bacon
- 222 Zucchini, diced
- 8 oz8 oz8 oz Baby Bella Mushrooms, sliced
- 10 oz10 oz10 oz Frozen Bell Pepper and Onion Blend
- 12 oz12 oz12 oz Frozen Cauliflower Rice
- 1 cups1 cups1 cups Frozen Corn
- 0.5 tsp0.5 tsp0.5 tsp Onion Powder
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder
- 0.5 tsp0.5 tsp0.5 tsp Smoked Paprika
- 111 Salt and Pepper, to taste
- 0.5 - 1 cup0.5 - 1 cup0.5 - 1 cup Cherry Tomato
- 0.25 - 0.5 cup0.25 - 0.5 cup0.25 - 0.5 cup Feta Cheese
- 111 fresh Basil, or any fresh or dried herbs

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a large skillet, first fry up bacon & cook until done.
- once bacon is done, transfer to a plate & keep ~1-2 T of grease in the skillet.
- add zucchini to bacon grease & saute for 6-8 minutes.
- transfer zucchini to a plate, then add in peppers & onions, cauliflower rice, & corn to saute for another 6-8 minutes.
- once veggies start to lose their moisture, add zucchini & bacon back in.
- season to your likings.
- remove from heat, then fold in cherry tomatoes & feta cheese.
- garnish with any fresh or dried herbs.
- serve with a protein of choice.
