bacon & veggie succotash
i always get asked how to eat more veggies AND make it taste good. well this side dish is FULL of flavor, FULL of veggies, & is super easy to throw together. paired with a perfectly grilled steak & you are sure to have a delicious dinner.
Ingredients
- 111 Zucchini, diced
- 8 oz8 oz8 oz Baby Bella Mushrooms, sliced
- 10 oz10 oz10 oz Bell Pepper and Onion Blend, Frozen
- 12 oz12 oz12 oz Cauliflower Rice, Frozen
- 1 cups1 cups1 cups Frozen Corn, optional
- 0.5 tsp0.5 tsp0.5 tsp Onion Powder

- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder

- 0.5 tsp0.5 tsp0.5 tsp Smoked Paprika
- 1/2 tsp1/2 tsp1/2 tsp Salt and Pepper, to taste
- 0.5 - 1 cup0.5 - 1 cup0.5 - 1 cup Tomato, Cherry

- 0.25 - 0.5 cup0.25 - 0.5 cup0.25 - 0.5 cup Feta Cheese

- Basil, Fresh, or any fresh or dried herbs

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- add zucchini, peppers, onions, mushrooms, & corn (optional) to a skillet on high heat.
- cook until moisture starts to evaporate & veggies start to saute - ~12-15 minutes.
- add a bag of frozen cauliflower rice & cook until moisture starts to evaporate.
- transfer zucchini to a plate, then add in peppers & onions, cauliflower rice, & corn to saute for another 6-8 minutes.
- lower heat to medium, then add in seasonings.
- fold in tomatoes, feta cheese, bacon or prosciutto; cook for 4-5 minutes.
- garnish with any fresh or dried herbs.
- serve with a protein of choice.
