  1. Preheat the oven to 325˚ and place the wheel of brie in a small baking dish or cast iron skillet.
  2. Use a sharp knife to score the rind by cutting slits both horizontally and vertically on the top of the brie.
  3. Spread the jam over the brie and sprinkle the top with the chopped pistachios.
  4. Bake for 10-15 minutes until the brie is softened. Serve warm brie with crackers or sliced French bread.

Notes

Jam - Strawberry, raspberry, fig, peach, or apricot jam will also work. A spicy jam or pepper jelly would be great too. Nuts - Chopped walnuts, pecans, or sliced almonds could be used as well or even a salty or spicy nut mix. Puff Pastry - Thaw a frozen puff pastry sheet and place the wheel of brie in the middle. Follow the directions for scoring the cheese and adding the toppings and then fold the pastry dough up and on top of the jam and nuts. Scramble an egg with some water and brush the puff pastry before baking and to help it seal together if needed. Bake until golden brown Nut Free - Omit the nuts and bake the cheese with jam only. Wedge - A wheel is definitely easier to bake, a wedge can be used as well. It will only take about 5-10 minutes at most and won't hold it's shape like the wheel, so it's best to serve it in the container you baked it in.
