balsamic glazed sardine blackberry flatbread
sardines are usually one of those foods you love or hate. i do love the taste of them, but I also love their nutrient density (omega 3s, protein, selenium, vitamin B12, calcium, & so much more!) if you have never tried them before, this combination of flavors is out of this world & definitely worth a try!
Ingredients
- 3 oz3 oz3 oz canned Sardines
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Balsamic Vinegar
- 111 Salt and Pepper, plus any other seasonings you like
- 111 cauliflower crust flatbreads or buns (click for recipe)
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Low-Fat Cottage Cheese
- 0.25 cup0.25 cup0.25 cup Blackberries
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Parmesan Cheese, or feta cheese
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp raw Pistachios
- 1 pinch1 pinch1 pinch Dried Mint, or other dried herbs
- 1 pinch1 pinch1 pinch Red Pepper Flakes

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a skillet, add sardines, seasoning, & balsamic vinegar; cook for 3-5 minute to let caramelize.
- warm the cauliflower crust, then mash on cottage cheese.
- place blackberries, balsamic glazed sardines, & parmesan on top.
- pan fry or microwave to melt parmesan cheese.
- garnish with pistachios, mint, & red pepper flakes.
