Banana & Date Pudding
A great make ahead dessert. A spin on the classic banana cream pie!
Ingredients
- 1 whole1 whole1 whole Banana Pudding Mix - Jello, (makes 4 servings)
- 1 cup1 cup1 cup Milk

- 30 pieces30 pieces30 pieces Maria Cookies (tea biscuits)
- 0.3330.3330.333 Milk

- 0.5 cup0.5 cup0.5 cup Medjool Dates
- 1 Tbsp1 Tbsp1 Tbsp Cinnamon, Ground, (for garnish)

- 3 whole3 whole3 whole Banana, (sliced into circles)
- 4 whole4 whole4 whole Banana, (cut into halves for garnish)
- 0.333 cup0.333 cup0.333 cup Date Sugar with Monk Fruit - Lakanto

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large bowl, make jello package according to instructions by mixing pudding mix with milk, blending and setting aside
- In a medium sized bowl, add dates with boiling hot water, set aside to allow them to become extra soft
- In a small bowl, add 1/3 cup of milk and set aside (use for dunking Maria cookies)
- Peel and slice approx 3 banans into circular forms and set aside into a bowl
- Drain dates from hot water and dice into small pieces, set aside into a bowl
- In serving cups or bowls of choice begin by taking approx 5 Maria cookies and dunking them into the bowl of milk, using this as your first dessert layer
- Follow by adding 2 tbsp of pudding mix over the cookies and creating a flat surface and sprinkle a handful of dates over the top
- Follow by layering your circular sliced banans and repeating the layers one more time for all serving cups/bowls
- Using plastic wrap, cover each cup or bowl and place in fridge overnight or for a few hours
- Once ready to serve, peel and slice 4 bananas in half and then slide your knive lengthwise down the middle of the banana to create another half
- In a medium sized skillet over medium heat, add butter along with date sugar and wait for it to bubble
- Once bubbling, add bananas cut side down for approx 2 minutes on each side or until the date sugar has stuck to the banana
- Place 2 pieces of banana over each banana pudding, sprinkle with cinnamon if you desire
- Dig in and enjoy!
Notes
SO addictive! You can store in fridge overnight or for a week!
