Banana Loaf Cake (gluten-free/vegan)
This incredibly easy Banana Loaf Cake is a simple & delicious snack that doubles as a healthy treat! Made with just four simple ingredients and containing no gluten, dairy or eggs, this cake is gluten-free, vegan and sugar-free! To make it more of a dessert, opt to top it with the easy yogurt fudge frosting.

- 0.75 cup0.75 cup0.75 cup Banana, overripe
- 0.5 cup0.5 cup0.5 cup Organic Creamy Peanut Butter
- 1 cup1 cup1 cup All Purpose Flour, use gluten-free, if needed
- 0.5 tsp0.5 tsp0.5 tsp Baking Powder
- 0.5 cup0.5 cup0.5 cup Semi-Sweet Chocolate Chips, use dairy-free, for vegan
- 0.5 cup0.5 cup0.5 cup Plant-Based Plain Yogurt (CHKP)
- 2 Tbsp2 Tbsp2 Tbsp Organic Creamy Peanut Butter

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees & line a 9x5 loaf pan with parchment paper.
- In a bowl, combine bananas and peanut butter until creamy and smooth.
- Stir in flour and baking powder.
- Spread batter into loaf pan.
- Bake for 20-25 minutes or until toothpick comes out clean.
- While cake is cooling, melt chocolate together with peanut butter.
- Stir in yogurt.
- Once cake has cooled, spread on frosting.
- Frosting with firm as it cools.
Notes
Add 1-2 tablespoons of maple syrup as needed to loaf cake if bananas are not overripe.
