bbq beef tamale pie (Edit recipe)

now that you have made your tasty homemade bbq sauce, let's put it to use in this hearty casserole. I love to use a ground beef that has hidden organ meats for an extra punch in nutrients + with all of the flavors you won't even know you are eating liver!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. preheat oven to 350.
  2. in a large pan, brown ground beef; drain any excess grease, then transfer to a bowl.
  3. in the same skillet, saute peppers & onions for 8-10 minutes.
  4. add in corn & black beans to veggies & cook until corn is thawed.
  5. add ground beef, bbq sauce, water, & seasonings to pan; then let simmer on low while you get the “cornbread” topping together.
  6. in a bowl, combine flour, baking soda, & salt.
  7. in a separate bowl, combine greek yogurt & eggs
  8. mix liquid into dry mixture.
  9. add in water, then fold in green chiles & cheese.
  10. add bbq beef mixture to a 9X13 baking dish, then evenly spread “cornbread” topping.
  11. bake casserole for 40-45 minutes or until a toothpick comes out of the “cornbread” mixture clean.
