bbq chicken, bacon, & avocado ranch loaded jicama fries (Edit recipe)

jicama fries take some patience to make, but when you get a good batch I can assure you it is worth it! I love to use them as a sub for regular fries to get in some extra fiber. load your jicama fries up with bbq chicken + bacon + cheese + avocado ranch & you will want this meal on repeat!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. preheat oven to 400.
  2. bring a large pot of water to a boil.
  3. add jicama to boiling water & boil for 10-12 minutes.
  4. remove from water & completely pat jicama dry.
  5. to a sheet pan, add jicama & toss with oil & seasonings.
  6. roast jicama for ~40 minutes, tossing every 10 minutes.
  7. while jicama is roasting, make avocado ranch - by adding to a food processor all ingredients; slowly adding in water to reach desired consistency.
  8. refrigerate dressing until ready to serve.
  9. in a small bowl, combine chicken & bbq sauce.
  10. to serve, start with a layer of jicama fries, then add bbq chicken, bacon, & cheese.
  11. microwave, air-fry, or broil until cheese is melted.
  12. top fries with avocado ranch dressing & enjoy.
