- Preheat oven to 325°F and grease a muffin pan.
- In a large bowl, whisk together the eggs, yogurt, cashew butter, maple syrup, lemon juice, zest, and vanilla until smooth.
- Stir in the almond flour, protein powder, monk fruit sweetener, baking powder, baking soda until just combined.
- Gently fold in the blueberries.
- Pour the batter into the prepared pan and sprinkle a few extra blueberries on top.
- Bake for 15–25 minutes
