Ingredients

  • 2 Tbsp Plant Based Butter, Avocado oil or olive oil can also be used
  • 1 whole Yellow Onion, Medium to large size; chopped
  • 2 whole Chicken Instant Bone Broth, I used 2 sticks of Bare Bones Instant Chicken Bone Broth (from 4-pack)
  • 1 cup Hot Water, Boiled water
  • 10 oz Frozen Vegetables, One (10oz) bag mixed vegetables (carrot, peas, corn & green beans); thawed part way
  • 2 cloves Garlic, Finely chopped
  • 6 cups Jasmine Rice, * You need 6 cups cooked, day-old rice*
  • 5 Tbsp Soy Sauce, Use gluten-free soy sauce

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Melt butter in large, nonstick skillet over medium heat. Add onions, stirring occasionally for 5 minutes.
  2. Add instant bone broth to boiling water; stir until dissolved, Add to skillet with onions.
  3. Add semi-thawed vegetables to skillet; increase heat to medium-high. Simmer 7-10 minutes, or until all bone broth has been absorbed into vegetables. During the last 2-3 minutes, stir in garlic. Reduce heat back to medium.
  4. Add rice; stir to combine with vegetables. Add soy sauce; stir to combine. Serves 8-12 depending on portion size.

Notes

*Jasmine rice must be cooked 1 (or 2) days ahead and stored in refrigerator until ready to make fried rice. Freshly-cooked rice will not work the same way in this recipe.* Dairy-free. Egg-free. Gluten-free. Nut-free.
