Breakfast Fries
Sometimes breakfast can become mundane, and we eat the same things repeatedly. Especially on the weekends, it's fun to make something different and delicious. I like to keep breakfasts savory to ensure the rest of my day is filled with nutrient-dense foods, and these fries tick all those boxes- savory, fun, delicious, and nutrient-dense. I used Siete Blanco Cashew Queso, but any dairy-free cheese sauce will work for this recipe. If you are on a round of Whole30, check the labels of your queso, breakfast sausage, and bacon. These are all foods that sugars are snuck into.
Ingredients
- 2 whole2 whole2 whole Japanese White Sweet Potato, cut into French fries
- 0.5 lb0.5 lb0.5 lb Breakfast Sausage
- 6 pieces6 pieces6 pieces Bacon, no sugar added
- 0.25 cup0.25 cup0.25 cup Red Onion, small dice
- 0.25 cup0.25 cup0.25 cup Cilantro
- 1 cup1 cup1 cup Cherry Tomato, sliced in half
- 4 whole4 whole4 whole Pastured Eggs
- 18 oz18 oz18 oz Blanco Cashew Queso - Siete Foods

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Fries: Oven Instructions- Preheat the oven to 400 degrees and line a sheet pan with parchment paper. Toss the cut sweet potatoes with avocado oil in a medium bowl and sprinkle with sea salt and pepper. Bake for 30-35 minutes.
- Air fryer instructions- In a medium bowl, toss the cut potatoes with avocado oil and sprinkle with sea salt and paper. Place in the air fryer basket and cook at 400 degrees for 14-16 minutes, making sure to shake the fries in the basket every 5-7 minutes.
- Cook the bacon on the stovetop in a pan. Once the bacon is cooked, roughly chop it and set it aside.
- Add the breakfast sausage to a medium sauté pan on medium heat. Break it into small pieces and continue cooking until it’s no longer pink. Drain any excess fat from the pan and set the sausage aside.
- Cook the eggs in a pan on the stove until they are over medium.
- Assemble the fries by topping them with sausage, bacon, red onion, cherry tomatoes, queso, cilantro, and fried eggs.
