Brown butter cocoa Banana cookies
Have extra bananas? Make some cookies! If you're expecting a strong cocoa flavor this cookie isn't the one for you.
These cookies have a lovely nutty taste from the browned butter, a light cocoa flavor and a chewy banana center. Think banana bread in cookie form.
Ingredients
- 111 Banana, Overripe
- 1.125 cups1.125 cups1.125 cups Gluten-Free 1-to-1 Baking Flour - Bob's Red Mill
- .5 tsp.5 tsp.5 tsp Baking Powder
- 8 Tbsp8 Tbsp8 Tbsp Butter, Salted, Room temp
- 0.25 cup0.25 cup0.25 cup Brown Sugar
- .5 cup.5 cup.5 cup Granulated White Sugar
- 1 Tbsp1 Tbsp1 Tbsp Cocoa Powder, Unsweetened
- 0.25 tsp0.25 tsp0.25 tsp Cinnamon, Ground
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Brown the butter in a sauce pan over medium to high heat
- Once the butter sizzles ensure you stir it until a brown color occurs
- Take it immediately off heat and allow it to cool for 15 minutes
- Preheat your oven to 375 degrees Fahrenheit
- In a large bowl combine butter and sugars
- Whip with a stand or hand mixer for 2 minutes
- In a separate bowl add your overripe banana, cinnamon and cocoa powder
- Mash this with a fork until fully combined and no banana chunks are seen
- Add the banana mixture to your large bowl
- Mix until fully incorporated
- In another separate bowl mix combine the gf flour and baking powder
- Then slowly add this to your large bowl in portions until fully incorporated
- Scoop dough with a small cookie scoop onto a baking pan
- Place in the freezer for 10 minutes
- Bake the cookies for 10-12 minutes
Notes
Be sure your banana is overripe. I like to use bananas I've had in the freezer for a month or so to make it easier to mash. Since this cookie doesn't have any eggs you can taste the dough and decide if you want to add in additional cocoa powder. If you are really searching for chocolate add chocolate chips for an additional layer of flavor.
