Caesar Pasta Salad (Edit recipe)

This Caesar Pasta salad is my favorite dish to bring to a potluck, picnic or barbecue. You can make it the previous day and enjoy it cold or at room temperature. What makes it special is that you can customize it to your dietary needs. Are you gluten-free? Use gluten-free pasta and croutons. Are you vegan or dairy-free, go for a dairy-free Caesar dressing and skip the parmesan cheese garnish. Do you want to make this a meal? Add some grilled chicken or cooked shrimp... the possibilities are endless. Enjoy it as a side dish, salad or an entrée. All you need is less than 10 ingredients and 20 minutes.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Cook pasta as per package instructions and allow it to cool down.
  2. Add the remaining ingredients - romaine lettuce, grape tomatoes, croutons, green parts of green onion, black pepper and your favorite Caesar dressing. Go as saucy as you like with the dressing. Mix well to coat the sauce.
  3. Garnish with parmesan cheese, serve with lemon wedges and enjoy!

Notes

  1. Add croutons just before serving to avoid them from getting soggy from the dressing.
  2. Add the dressing atleast half an hour before serving, allowing the pasta and the rest of the ingredients to absorb the flavors.
  3. Make sure the pasta has cooled down before adding the remaining ingredients.
