inspired by the viral pizza caesar wrap — but we’re ditching the wrap & making nachos instead! 🧀🥗🍕 gf pita crackers piled high with homemade caesar salad, crispy pizza chicken, pepperoni, parm crisps & all your favorite toppings. high-protein, gluten-free, & ridiculously flavorful. salad meets pizza meets nacho night — aka the caesaroni of your dreams!
Ingredients
pizza chicken
- 10 oz10 oz10 oz Tomato Sauce
- 2 Tbsp2 Tbsp2 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1-2 Tbsp1-2 Tbsp1-2 Tbsp Amore [Italian] Seasoning - Primal Palate

- 2-4 Tbsp2-4 Tbsp2-4 Tbsp Water
- 2 lb2 lb2 lb Chicken Thighs, Boneless Skinless

- 1/2 tsp1/2 tsp1/2 tsp Salt and Pepper
caesar salad
- Lettuce, Romaine, finely chopped
- greek yogurt caesar dressing (click for recipe)
nachos
- Himalayan Salt Veggie Pita Crackers - Simple Mills
- Parmesan Cheese, finely grated

- Pepperoni, Uncured, diced
- Parm Crisps, crushed, I used pepperoni flavored parm crisps

- Peperoncini Peppers, sliced
- Kalamata Olives, sliced

- Red Pepper Flakes, for garnish

pizza chicken
- prepare tomato sauce by adding all ingredients to a sauce pan; simmer for 8-10 minutes.
- in a separate bowl, add chicken, salt, & pepper.
- heat a large skillet with a little fat of choice, then add chicken & cook for 5-6 minutes.
- add ~½ tomato sauce top of chicken & simmer for 8-10 minutes or chicken is cooked.
caesar salad
- toss chopped romaine with homemade caesar dressing; refrigerate until ready to assemble.
building nachos
- to a plate or bowl, layer: pita crackers → caesar salad + parmesan → pizza chicken → pepperoni, pepperoni parm crisps, peperoncini, olives, & red pepper flakes.
