Cajun Chicken and Sausage Pasta
This simple Creamy Cajun chicken and sausage Pasta is made in 30 minutes! (we all love a quick but delicious meal) It’s a perfect creamy pasta that will satisfy any craving! Its loaded with flavors from the , cajun seasoning, bell peppers, tomatoes, herbs, spinach, chicken, andouille sausage snd the creamiest Cajun sauce that has mascarpone and coconut milk!
Ingredients
- 222 Chicken Breast, cubed
- 2 tsp2 tsp2 tsp Cajun Seasoning
- 4 Tbsp4 Tbsp4 Tbsp Extra Virgin Olive Oil, 2 Tbsp for marinade, 2 tbsp for cooking the chicken
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 1 lb1 lb1 lb Pasta, short cut
- 6 oz6 oz6 oz Andouille Sausage, sliced (3 links)
- pinch pinch pinch Salt and Pepper
- 1 sprig1 sprig1 sprig fresh Rosemary, chopped
- 3 sprigs3 sprigs3 sprigs fresh Thyme, chopped
- 1 whole1 whole1 whole Tomato, beefsteak
- 1/21/21/2 Onion, chopped
- 2 whole2 whole2 whole Bell Pepper, chopped (I used green and red)
- 2 cups2 cups2 cups Spinach, fresh or frozen
- 5-6 cloves5-6 cloves5-6 cloves Garlic, finely chopped
- 1 pinch1 pinch1 pinch Red Pepper Flakes
- 14 oz14 oz14 oz Coconut Milk, (1 can)
- 4 oz4 oz4 oz Mascarpone Cheese
- 1/2 cup1/2 cup1/2 cup Parmesan Cheese, grated
- 1/4 cup1/4 cup1/4 cup Pecorino Romano

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Season the chicken with Cajun seasoning, olive oil, and lemon juice.
- Bring a large pot of salted water to a boil. Cook the pasta until 2 min before al dente, Drain.
- On a heavy set pan set over medium-high heat, add 2 tablespoons olive oil. Cook the chicken until browned about 7 minutes, place aside. In the same pan, add the sausage, cook for about 3 min then add the veggies and cook until the sausage is done and the veggies are softened. place aside when done.
- To the pan, drizzle more olive oil, add the garlic, rosemary, thyme and red pepper flakes and sauté until fragrant. Stir in the tomato paste then pour in the coconut milk, add 4 ounces of mascarpone (or cream cheese) and whisk until smooth. Bring the sauce to a gentle simmer and cook 3-5 minutes, until thickened slightly.
- Stir in the cheese Then toss in the veggies, sausage, chicken and pasta. Cook for about 2 min then remove from the heat and stir in more cheese if deserted. Serve immediately and top with your favorite herbs!
