Coquito French Toast (Edit recipe)

There’s so much to love about this French toast. I used the beloved Coquito (Puerto Rican eggnog) in place of milk. If you don’t know what Coquito is, it’s a Puerto Rican eggnog like drink prepared with coconut milk and is traditionally served on Nochebuena (Christmas Eve). There are many variations to this drink, but the base ingredients are always the same: coconut milk, sweet condensed milk, cinnamon, nutmeg and Caribbean Rum. My best friend @jissettemarie_ makes a damn good Coquito so if you’re in Miami and want to buy a bottle, hit her up!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Beat eggs and coquito together. Add cinnamon, nutmeg, salt, vanilla and sugar.
  2. Dip the bread slices into the mixture, allowing each side to sit for 1-2 minutes in the eggnog mixture. You may also leave the slices in the eggnog mixture overnight if you choose to.
  3. When ready to cook the french toast, heat a large skillet or griddle over medium heat and coat generously with butter. When the skillet is hot, cook the french toast in batches (do not overcrowd) until golden and crisp, 4 to 5 minutes per side.
  4. Remove and serve immediately with whipped cream, crushed walnuts and maple syrup/honey.
  5. Enjoy!
