california caprese chicken skillet
honestly, cooking chicken intimidates me. this skillet, however, is easy to cook, the chicken is juicy, & the flavors are INCREDIBLE!
Ingredients
balsamic reduction
- 0.5 cup0.5 cup0.5 cup Balsamic Vinegar
- 2 Tbsp2 Tbsp2 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto
- Water, to thin as needed
chicken
- 2 lb2 lb2 lb Chicken Breasts, Boneless Skinless, use one's that are relatively the same size
- 1 Tbsp1 Tbsp1 Tbsp Amore [Italian] Seasoning - Primal Palate
toppings
- Mozzarella, sliced
- Tomato, sliced
- Avocado, sliced
- Basil, Fresh, cut into ribbons
- Red Pepper Flakes

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- first prepare balsamic reduction, by whisking together vinegar & sweetener.
- bring the mixture to a boil, then reduce to a simmer for 8-10 minutes to allow to thicken.
- remove from heat & allow to thicken while cooking remaining ingredients - add water if becomes too thick.
- heat a skillet with a little oil over medium heat.
- season chicken with amore seasoning.
- add chicken to skillet; sear the on both sides for about 3-4 minutes or until golden brown.
- reduce heat to medium heat, then add lid & cook chicken until done.
- add mozzarella to chicken - option to broil for 3-5 minutes.
- once chicken is done, top with slice of tomato, slices of avocado, & drizzle with balsamic reduction.
- garnish with basil & red pepper flakes.
- serve with a side of veggies.
