Mediterranean salad with whipped walnut feta cottage cheese dressing is a cold, crunchy chopped salad made with cucumber, cherry tomatoes, green bell pepper, red onion, and feta cheese, under a thick blended cottage cheese dressing. It is what I make when it is too hot to cook, and I still want something that fills me up. This is a no cook salad. It takes 10 minutes to make, no stove, nothing to stand over.

Dressing

- 2 Tbsp2 Tbsp2 Tbsp Walnuts
- 1 tsp1 tsp1 tsp Oregano, Dried

- .5 tsp.5 tsp.5 tsp Garlic Powder

- .25 tsp.25 tsp.25 tsp Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Chop the cucumber, green bell pepper, and red onion into small, even pieces and add them to a bowl. Halve the cherry tomatoes and add them too.
- Chop the parsley and crumble the feta. Scatter the parsley and 4 tablespoons of the feta over the vegetables, and keep the other 4 tablespoons back for the dressing.
- Add everything for the dressing to a blender or food processor: the reserved feta cheese, cottage cheese, apple cider vinegar, walnuts, oregano, garlic powder, and black pepper.
- Blend until smooth and creamy. Keep blending until the walnut flecks have disappeared. For a looser dressing, add a splash of water and blend again.
- Spoon the dressing over the salad, or serve it on the side so everyone adds their own.
Notes
- Makes 2 servings, about 2 cups each.
- Make ahead: the dressing keeps in an airtight container in the fridge for up to 3 days and is better on day 2. The chopped vegetables keep a day or two undressed. Dress only what you are eating.
- Once the salad is dressed, eat it the same day.
