Process

  1. Make the red cottage cheese dressing, blending until it's smooth and creamy
  2. Make the gyro chicken, then slice it into strips.
  3. Slice the cucumber, halve the cherry tomatoes, thinly slice the red onion, and pit the olives. Toss them together and divide between two wide bowls.
  4. Lay the warm sliced chicken over the vegetables.
  5. Spoon the red cottage cheese dressing over the top, starting with less and adding more to taste.
  6. Crumble the feta over the bowl and finish with a pinch of dried oregano. Serve right away, while the chicken is warm.
